Our Philosophy
In the heart of our winery, the cellar represents the place where the magic of winemaking comes to life. Built with the aim of respecting and enhancing the unique characteristics of Etna grapes, our cellar skillfully combines ancient winemaking traditions with modern technologies, in order to produce wines that are the ultimate expression of the volcanic terroir. Every stage of winemaking is followed with extreme care, from the arrival of the freshly harvested grapes to the aging of the wines. We use techniques that respect the integrity of the fruit, ensuring that each bottle encapsulates the best of the organoleptic characteristics of the grapes. The selection of the grapes is done manually, choosing only the best bunches, to ensure quality from the very beginning of the process. Fermentation takes place in temperature-controlled steel tanks with selected yeasts to preserve the freshness and natural aromas of the grapes, while aging can continue in wood depending on the style of the wine and the varietal characteristics we wish to enhance.
Our cellar houses second-passage, medium-toast French oak barrels specifically chosen to enhance the structure and balance of the wines. The use of woods with different toasts allows for aging that adds complexity without ever overpowering the natural expressiveness of the wine. The steel tanks, on the other hand, ensure the preservation of varietal aromas, essential for wines that require significant freshness. We strongly believe in adopting sustainable practices in the cellar. Every stage of production is designed to reduce environmental impact: we use energy from renewable sources, carefully manage water resources, and minimize the use of chemicals. Additionally, we have implemented responsible waste management and resort to recycling in various areas of production. In our cellar, time plays a fundamental role. We respect the natural rhythms of the wine, allowing it to mature and refine until it reaches perfect balance. Every wine has its own journey: some require long aging periods, while others best express their characteristics with more immediate winemaking. Our goal is to bottle only when the wine is ready to tell the story of the territory and its vintage.
